Busy Busy Week

Hello everyone, Well many of you know that I have been here running the bakery while Michelle is at 105 degrees for her Raw Culinary Academy. She will be coming home soon... well actually I will be leaving here to go visit her for the last few days. 105 Degrees is going to be hosting a Live and Learn event on Oct. 3 which I am going to be attend. I am very excited! I wanted to share with all of you what I have been up to here at Twin Cakes Bakery - lots of orders and some new things at the farmers market. First it started with a little single layer vanilla blueberry cake for 1 year old Next some baby shower cupcakes for a little boy Next was Chocolate Princess Cake with chocolate cupcakes Than Lemon "monkey" Cake with lemon hot pink frosting and black polka dots with red velvet cupcakes (this cake and cupcakes contain soy) Than finally time to bake for farmers market. I brought some new items this week: New gluten free vegan items Chocolate chip raspberry muffin And blueberry apple muffins Some New Pure2Raw product line items: Raw Cinnamon Raisin Bombs - if you love cinnamon - you will love these! New item - raw brownie sandwiches - need I say more Another new item: Raw chocolate spiced truffles - these are to die for!!!! Than ended my very long week with another 1 year birthday cake: Double layer 6 inch chocolate cake with vanilla frosting Wow, is all I can say. It was a pleasure doing it all and I hope everyone enjoyed their goodies!! Thanks again for choosing Twin Cakes Bakery as your gluten free, vegan, and raw bakery! I must say I am looking forward to Michelle coming back... it will be nice to have an extra set of hands to help out again. And I am excited to learn everything she has learned at 105 degrees. Busy Friday baking away

Hello everyone, Happy Friday! Well, as many of you know Michelle is out of town for the month of October and I have been here handling things with the bakery! I wanted to share with all of you some pictures of the delicious gluten free vegan baked goods and some raw treats as well. Chocolate chip cookie sandwiches Raspberry Streusel Muffin Mini Carrot Cakes Mint Brownie Sandwiches Bags of chocolate chip cookies Here are some Pure2Raw product line: Variety of our crackers Our famous and delicious green onion flatbreads (variety of kale, collard green, spinach, and swiss chard) Fudge brownie bites right out of the dehydrator Samoa Rings cookies right out of the dehydrator - now need their second layer of goodness Close up of samoa ring cookies with its moist, sweet, caramel topping - now it just needs the chocolate drizzle Now that is much better - complete raw samoa ring cookie with chocolate drizzle Well still got more to bake here at Twin Cakes for the market tomorrow. Still got scones and muffins. And baking banana cupcakes and blueberry cake for a birthday. Time to get back in the kitchen. Enjoy your weekend! Trying a new gluten free pizza crust recipe

Hello everyone, Last night we decided to try creating a new gluten free pizza crust recipe. The one we currently have at Twin Cakes Bakery is great and we love it though we wanted to try making one that can be a roll out. Also our current gluten free pizza crust is also vegan and yeast free, double bonus. You might be asking yourself why would we want to create another pizza crust if we already have one? Good question. The answer is we are just curious and we love to play around with recipes sometimes. It help makes our products better and us really understand our ingredients. The first trial pizza crust recipe ended up being great to roll out. Very nice, smooth non-sticky dough. Easy to roll out. Though when it baked the overall appearance was not the greatest. Looked really boring (to us at least). Though sometimes gluten free baking creations do not always turn our "pretty" even though they taste great. The crust rose alright. For the taste test for the first batch of pizza it tasted fine. Crust was pretty basic,not whole wheat tasting, good chew (maybe too much), and almost had too much of a starchy taste to it. But overall decent crust! This one we will keep playing around with till we get the thinner crispy crust pizza that so many customers of ours like. Here are some pictures of the gluten free pizza #1: The second trial pizza crust recipe was very similar to our current recipe because the main difference we did was add yeast to it instead of using baking powder. It was not a roll out like the first one. We ended up spreading it out with a spatula, which is how we do our current one that we love. Yea, it is a little bit more work but not hard. It rose nicely. For the taste test it tasted great. Soft, moist, and chewy. Just like a think crust pizza. So by adding the yeast did not really help in providing a "crunchy" texture pizza. Probably going to leave it as a yeast free pizza crust since it comes out already so nicely. Well we hope you enjoyed seeing our gluten free pizza crust trial recipes.
