Gluten Free Informational Site in Raleigh
One of our customers that we have met at our Moore Square Farmers Market has created a great informational site where he tells people good places and not so great places for people with gluten allergies. Please check out his site at http://glutenfreeraleigh.blogspot.com and let your family and friends know about it. It is great to know that there are more individuals in the Raleigh-Durham area that are helping promote and give advice to others about gluten free allergies. Please stay tuned for more information from the Gluten Free Twins. And please come by and see us every Saturday at the North Hills Farmers Market from 8-12.

Why we use the ingredients we use....
We want to share with all of you why we use the ingredients we use in both our cooking and baking. Through many years of reading, researching, and experimenting with new ingredients, seasonings, and eating habits we have come across that balance is key to good health. Everyone always tells you that if you eat a balance diet, exercise, and take care of yourself that you are on the right track. And it is true. From our personal experiences, it takes time to figure it all out, but when you do it is all worth it. There is so much out there that is available to be able to create healthy, quick, simple, and delicious meals that are gluten free, vegetarian, vegan, and raw. That is why we started our company to help show others how easy it is and how eating this way is not boring. One of the key ingredients we use frequently is a seed called quinoa (keen-wa), known as the "Mother Grain" which dates back over 5,000 years. And it is not even a grain, but a seed. Quinoa is a complete protein, which is great for vegans and vegetarians, and it is easily digested and full of nutrients. This is one of our favorite seeds to cook and bake with. You can find this seed at any health food store, there is also Red Quinoa, which cooks just the same and taste great! It is an all-around great seed that should be consumed in everyone's diet.
Another key ingredient is olive oil. We use this in just about everything we create. There is even raw olive oil which is great for people on raw diets. As everyone knows that extra virgin olive oil is high in antioxidants and full of nutrients. We also use flaxseed oil and ground flaxseeds quite often. Flaxseeds are rich in ALA (alpha linolenic acid) - an omega-3 fat that is a precursor to the form of omega-3 found in fish oils. They are also a great source of fiber and magnesium.
We believe in comsuming these basics ingredients and they are simple things you start to add to your diet. These are just some of the great ingredients we use at Twins Kitchen. Stay tuned for more information about our ingredients.
